he ProStart Teacher Training was held on November 16
th
,
2014. Central New Mexico Community College hosted 32
educators from across the state in their new culinary labs. The
educators had a full day of presentations. ProStart Coordinator, Victor
J. Martinez, gave an overview of state and national ProStart updates and
educators were given a preview of the upcoming New Mexico ProStart
Invitational, and the ProStart Competition Boot Camp. The Boot
camp is held to prepare students and educators for the culinary and
management competitions at the New Mexico ProStart Invitational.
CNM chef instructors conducted a hands-on demonstration on plating
techniques. This gave the ProStart educators great ideas on how to
create beautiful savory and sweet plate presentations.
Tod Muxworthy, Area Director for Chili’s Restaurants, unveiled the
Brinker ProStart Initiative. The Initiative encourages Chili’s managers
nationwide to work with local ProStart schools by offering field trips,
mentoring and internship opportunities. Chili’s will also provide
coaching to students on proper interview skills, including how to dress
for success.
The night before, ProStart educators experienced an incredible six
course dinner at Hotel Andaluz, prepared by Chef Erkut Karratas. Each
course was amazing. Wine for the dinner was donated by Southern
Wine and Spirits.
The day ended with a tour of the new culinary arts labs at CNM. The
tour was given by Victoria Martinez, Director of Culinary Arts and
Hospitality Management.
