Annual ProStart/Student
Educator Boot Camp was held
on February 9
th
, 2015. Twenty
schools and 105 students participated in
the event. The purpose of the Boot Camp
is to prepare students for the New Mexico
ProStart Invitational. New Mexico State
University, School of Hotel, Restaurant and
Tourism Management (NMSU/HRTM)
hosted the event.
The students and educators experienced
a full day of seminars in culinary arts
and hospitality management. Chef John
Hartley, a professor in HRTM, conducted
a morning seminar on knife skills, which
included a chicken fabrication component.
He also conducted an afternoon seminar on
food costing. For the culinary competition
in April, students will execute several knife
cuts, including poultry fabrication, and
they will also be responsible for costing
their menu. Crestina Medina, former
ProStart student and current NMSU/
HRTM major, gave a presentation on
Safety and Sanitation. Professor Daren
Bloomquist conducted a morning seminar
on food costing for the management
portion of the competition. His afternoon
session focused on preparing for the verbal,
written, and critical thinking portion of the
management competition.
It was an enjoyable day for the participants.
The students and educators were given
many great ideas and tips on how to
succeed at the New Mexico ProStart
Invitational. Many of the students were also
very excited to have had the opportunity to
visit a university campus and interact with
college students.
